40 Days-40 Lenten Recipes # 7 Super Easy-Red Clam Sauce

Super Easy-Red Clam Sauce

2 garlic cloves, minced
1/4 c white wine
1 c bella mushrooms, cleaned and sliced
1 c grape tomatoes, cut in thirds
2 c tomato sauce
3-4 dashes oregano
1/4 c fresh parsley
10 oz clams, canned

Start by placing the white wine, garlic and mushrooms together on high heat.
Then add tomatoes and oregano.

Continue to cook and move with spatula to prevent burning
and until it is reduced to half.

Add tomato sauce, parsley and continue to stir for 10 minutes,
add clams, cook for 5-10 more.

The parsley gives it a nice kick in flavor as does the wine.
Don't worry, the alcohol is burned off but remember, if you wouldn't drink it, don't cook it.
Use over rice or pasta, even good, just with a nice crusty bread.
Um, crusty bread...

This recipe looks so good. I have never made a clam sauce before, but I think I will try it now.

Thank you for linking this recipe up at the In and Out of the Kitchen link party. I look forward to seeing what you bring to the party next week.
