Roasted Red Pepper Sauce
4 large red bell peppers
1 c white wine
1/3 c shallots, minced
1/2 tsp thyme
2 T lemon juice
2 T lemon juice
salt and pepper
Place foil on a pan and place peppers cut lengthwise, broil until tender and almost charred. Peel peppers and put them in blender and process until smooth.
In a saucepan, combine shallots, wine and bring to a boil, stir in thyme, lemon juice, salt and pepper and then transfer to blender.

Or just on its own as a dip with toasted pita.
Appropriate for a strict fast day.
The colors of this dish are actually so vivid and it's sweet with a kick.
