This is a satisfying way to start the day, or a treat after school. If you can make bread, you can make these. They don't take as long as bread, they traditionally are called Koulouria, and are delicious on their own or with some jam.
Ingredients- makes 12 large pretzels
1 packet active dry yeast
1 tsp sugar
1 1/2 cup warm water
1/4 cup water (non-strict fast time may use olive oil)
3 cups flour
1 tsp salt
2 Tbsp agave necter
1/2 cup sesame seeds
Preheat oven 450 degrees.
Mix one packet active dry yeast with sugar and warm water, and let sit for 10 minutes, allow to bubble.
Mix in 3 cups flour, add 1/4 cup more water while adding flour, then cover with plastic wrap and place in non-drafty spot for one hour.
Mix agave necter with equal amount water, in one dish. In a second dish, pour 1/2 cup sesame seeds.
Punch down, pull apart and make into pieces. Roll in your hands, make a rope twist and make a circle. Dip in liquid then onto sesame seeds and place onto parchment paper.
Place two pans with water, on top and bottom racks of oven. When your pan is full place on center rack and bake for 15-20 minutes and golden.
Have a blessed Lent.
