Mango-Coconut Rice
2 cups light coconut milk
1 cup water
1/2 cup sugar
2 T vanilla extract
2 cups jasmine rice
1 mango
1 mango
Mix all together, and bring it all to a boil. Turn it down to low and continue to stir while it heats.
Partly cover and cook for another 30-45 minutes.
Continue to stir.
It's done when you start to fold it over and it is thickened.
Cut up a mango to serve on the side.
