Octopus with Greek Sauce-Two Ways
Wash octopus and place it in a pot cook over low heat until it is tender.
If it is frozen, thaw in water first.
While it cooks, place a plate over top, to help hold octopus down in the pot.
Also be careful it doesn't boil over, easy to happen.
It will be tender when it's cooked.
Now Two Options
May fry with some lemon and little olive oil, oregano and fresh parsley.
or
May cut into pieces and place in a clean jar with sauce.
Shake well and may be kept in the refrigerator for several days.
Eat cold or hot.
Sauce
2-4 cloves of garlic, mashed into paste
1/3 c fresh parsley, chopped
dashes of oregano and pepper
3/4 c olive oil
1/2 c red wine vinegar
