Eggplant Stacking

Here's another one of my BFF's, she inspires me, she supports me and is one of the most beautiful and elegant women I know. She is also another Presvytera, whom I consider a mentor and is as awesome in the kitchen, as she is everywhere else.

2 red onions, sliced 
6 red potatoes, sliced
2 purple eggplants, sliced
(after slicing let sit for 1 hour salted)
16 oz tomato sauce
1 T olive oil
1 tsp sugar
oregano, garlic powder, salt and pepper

Heat oil, add onions and a little sugar and caramelize, wait until translucent and place on bottom of baking dish. Place sliced eggplants and potatoes in separate pan, brush with a little oil and dust with garlic powder, oregano and salt and pepper. Bake at 400 degrees for 20 minutes.  Remove and stack them on top of onions and tomato sauce and bake at 350 degrees for another 40-60 minutes or until potatoes tenderly cooked.

Serves 4, enjoy hot or cold.
