Lemon Basil Sorbet

Lemon Basil Sorbet
This is a easy way to help celebrate special days, especially Sts Constantine and Helen's feast day and the Exaltation of the Cross.  Recommend making it day before you plan to enjoy it, to allow for freezing time.


2 c loosely packed fresh basil

2 c fresh lemon juice

2 c sugar (may sweeten more to taste)

2 c water
lemon zest per preference


Combine all the ingredients except lemon juice, and bring it to a boil, make sure sugar dissolves completely.




Remove from heat and allow the mixture to cool completely. Strain mixture through a sieve and press basil leaves to remove excess liquid. Discard basil.





Add lemon juice to sugar mixture. Place in a freezer safe container (any covered metal or glass pan will work) and remove every 2 hours to break up the crystals/ice, do this at least 3 times.



The more times the mixture is mixed the smoother it will be, and expect it to be softer than that bought at the store.
