Pink and White

YES, it still feels and looks like winter,
spring will eventually be here.
We are almost there.
Our ladies society at church recently had a tea and I was given these lovelies.
They fill the kitchen with a beautiful aroma, sweet and full of spring.


Many are hoping for spring and renewal. In Greek, many times there are single words that encapsulate multiple meanings. The word I'm thinking of means patience, strength, perseverance, taking things in stride. This is something not only we all need for waiting for spring but also for many events in our lives. I think of recent events and I pray for...

EPOMONI

The funeral arrangements have been made and there are several places, here and here,  to assist Presbytera Kate and the Baker family.

I can't believe this is Spring?

Had been feeling so optimistic this past weekend about the weather, the garden plans, got to some spring chores.  I was so excited I put up our new feeder. Isn't it pretty? Even made hummingbird syrup for the new feeders.  They are getting closer and thought they might even be here in a few days. Did you know you could track their migration, here.
And then...


This was the scene this morning. 
Seriously? Can you see the lines above that is how hard it was falling and still is.

Broiled Scallops on a bed of Fresh Spring Greens

40 Days-40 Days Lenten Recipes


First day of Spring-weather started cold but was 56 degrees by end of the day. Allelulia, there is hope in sight! Keeping it simple today-will write more another time but it's been a rough week.  We lost one of our sweet cats this week, the end was bittersweet. We miss him.

Back to the recipes...

I know you come by to share the day to get some ideas for dinner. This one is simple and yummy and fast. A treat to make and enjoy.  Broiled Scallops on a bed of fresh spring mix greens with grape tomatos. I rinsed and thawed the scallops then placed them in a stoneware broiler pan, with a little vegan butter, paprika, squeeze from a lemon and dusting of garlic powder. Nothing to it. In less than 20 minutes they were done, I didn't keep track of the time...sorry, you really have to look at there color to tell. When they are no longer translucent, they are done. Added a yummy poppyseed dressing, but the Avocado Poppyseed dressing would taste good too!

40 Days-40 Lenten Recipes: The Recap


Last year, I had a challenge for myself of not only keeping the fast, but also blogging daily for 40 days of recipes, to help share the day.  It was a challenge, I will admit, not being a daily blogger, it was tough! When I mean tough, think how exhausted Julie Powell of "Julie and Julia" was, lying on the couch. She worked, she cooked, she blogged. For me, add trying to make church services, a child and a few other important demands on my time.

Kudos to all those who post daily. You are all superwomen! For me, I am so excited that this year there is help on the horizon. The help is that of my beautiful and sweet guest writers, who will be with us to share the Lenten day. Not only recipes will be shared this year, but also Lenten crafts, activities and family time.  The purpose of this series, is not about the food, it's about helping make it easier to focus on the real things we need to focus on.  If you are new to fasting, walk before you run.
