Chocolate Fig Tarts with Almond Date Crusts

40 Days-40 Days of Lenten Recipes

This has become my all-time favorite dessert. It's Lenten, Paleo (depending on ingredients) and Vegan. The flavors of this tart blend perfectly together, whether you want it sweeter with the fruit topping or a bit more savory with almond.  The filling is rich and almost decadent-just heavenly!





I think even in non-Lenten times, this is an awesome healthy sweet treat.  Which means it's a treat, don't think just because healthy ingredients are used you can exist on this and eat it everyday? 
It's called balance, people, balance!






Crust Ingredients
1 cup almonds slivered
1 cup dates
1/4 cup coconut oil
2 T maple syrup
optional-may add a little cacao powder to crust when blending if you would like it to also be chocolate

Combine in a food processor and then press into a greased baking dish of choice.  Place in preheated oven at 250 degrees for 10 minutes. Take out and allow to cool.


Filling Ingredients
1 cup figs
1/2 cup dates
1/2 cup coconut oil
4 T cashew butter
1/2 cup cacao powdered
1/2 almond milk (warmed)
1/2 cup dark chocolate chips
1 tsp almond extract
(tip:when it comes to chocolate, splurge, it does make a difference)

Start by mixing the figs, dates and coconut oil and cashew butter in the food processor. Mix until as smooth as possible. Don't burn your machine, do it in bursts.  Add the powdered chocolate and blend again. Heat the milk in the microwave and then the chips separately, melted, blend them together and then add almond extract and add to remainder of the mixture. Pour into the crusts.  Now you have an option, fruit or nut topping? Your choice, you can't go wrong.  Refrigerate at least 2 hours and then enjoy.




In the picture above, had a dilemma! The tart was longer than the serving dish! 
Oh no!  Gosh, what to do, what to do? 
I cut it half and took an extra little piece out, hee hee hee. It fit perfectly then.

  2. You know, you are right! I hadn't thought of the gluten-free aspect. It's definitely not for anyone with nut tree allergies. But gluten, totally doable, and it is soo super yummy. Seriously.
