Well, the baking bug has hit me again. I really do love baking.
This is an original recipe that we really enjoy and play with what to call it.
"Choco-cot", "Apri-coco", "Choco-bana-cot" or hey, just "Choco-Frutti-Tutti".
Doesn't matter, what you call it, it's delish!
Full of healthy flavonoids, Vitamin C and anti-oxidants.
Eggless Chocolate Apricot Cake

Full of healthy flavonoids, Vitamin C and anti-oxidants.
Eggless Chocolate Apricot Cake
1 cup canola oil
1 1/2 cups sugar
1/2 cup water
1 mashed banana
2 tsp vanilla extract
1 tsp white vinegar
1 tsp baking soda
2 cups flour
1 T baking powder
2 T cocoa
2 T cocoa
1 cup apricots, chopped
1/2 c water
2 tsp vanilla extract
Mix the chopped apricots with vanilla and water and set aside.
Mix the oil and sugar, and then next four ingredients, in order, using a whisk.
Add baking soda and then start incorporating flour mixture, folding it in.
Last drain apricots and fold them into batter.
Pour into a baking pan sprayed with baking spray and bake at 350 degrees,
until spongey and knife comes out clean.
(approx 40 minutes)
Banana Icing
1 banana mashed
2 cups icing sugar
1 tsp vanilla extract
2 T water
(optional- add cocoa)
(optional- add cocoa)
